🍜Lentil soup doesn’t have to boring and bland.
If you haven’t noticed already I love coconuty flavour, so I added some coconut milk to the soup. All it takes is to add some spices and exotic flavour to it to make it different and yet delicious 😋. Great for winter cold day😀.
INGREDIENTS :
✅ 1/2 cup red lentils, rinsed
✅1 sweet potato, chopped
✅1 yellow bell pepper, chopped
✅1 small red bell pepper, chopped
✅1 cup coconut milk + 2 cups water
✅ 1 vegetable stock cube
✅1/2 teaspoon ground turmeric
✅1 teaspoon garlic powder
✅1/2 teaspoon paprika
✅1 clementine
✅1 large Brazil nut
✅ small handful cashews
✅ 1/4 inch piece of fresh ginger root
PREPARATION :
1. Place the red lentils, sweet potato, peppers, coconut milk, water, vegetable stock cube, turmeric, garlic powder and paprika into a medium pan.
2. Bring the soup to the boil and once it begins to bubble reduce the heat from high to medium. Allow the lentils and sweet potato to simmer in the liquid until soft.
3. Once the soup is ready, transfer all of the soup into a blender along with mandarins flesh, nuts and ginger.
4. Blend until smooth. If it’s to thick, you can always add more water or coconut milk.
