CARROT CAKE BLISS BALLS

If you would like to sit down with a cup of tea and a cake on the side, but you don’t have a time to make one – how about the carrot bliss balls instead?

They take literally 15 minutes to make. And if you have carrot pulp to spare after making juice that’s even better. That is what I did.

INGREDIENTS:

Makes about 17

10 Medjool dates, pitted

140 g walnuts

1 large carrot, grated or use the pulp from the juice

1/3 tsp ground ginger

1/3 tsp ground cinnamon

1/8 tsp ground nutmeg

50 g mixed sunflower seeds, linseed and almonds

50g desicated coconut

PREPARATION:

  1. Place all ingredients except of desiccated coconut in a food processor and process them until combined.
  2. Take about tbsp of the mixture at a time and form a ball.
  3. Roll them in desiccated coconut.
  4. Place them in airtight container and keep in the fridge up to 2 weeks.
