Simple, crisp salad with aromatic flavour will make delicious addition to your meal. It’s so simple to make, rich in vitamins and minerals. I love the juicy little bursts of joy from the pomegranate jewels. If you can’t find pomegranate seeds, you can use dried cranberries. They would be good too!
For the Salad:
4-5 cups mixed salad greens
1 cup pomegranate seeds
1 cup chopped cucumber
2 tablespoon sesame seeds
Half of sliced avocado
For the Dressing :
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1/4 teaspoon lemon zest
2 tablespoons fresh orange juice
1 teaspoon agave syrup
Sea salt and black pepper to taste
1. Place all salad ingredients in a bowl.
2. To make a dressing, combine all dressing ingredients in a small bowl or jar. Whisk until well combined.
3. Drizzle dressing over salad and serve.
