Banana Pancakes

This recipe is delicious and very quick to make. I like having pancakes for breakfast when I run out of ideas of what to eat in the morning.

They taste good as they are or you can have them with fruits and maple syrup, to make it even more tasty and sweet a meal.

To make pancakes without frying them in the pan, I use sandwich toaster. If you don’t have one, fry them in the pan with some coconut oil 🙂

Makes about 12 pancakes

Use organic products as much as possible

You will need:

  • 1 cup of soya milk (or you can use vanilla soya milk and skip adding vanilla essence)
  • 1 cup wholemeal flour
  • 1.5 tbsp peanut butter
  • 1 tsp chia seeds
  • 1 tsp vanilla essence
  • 2 ripe bananas

How to prepare:

In a medium bowl, cream together mashed bananas and peanut butter. Add chia seeds and vanilla essence; stir in milk. Add flour to the mixture and stir until well combined.

Heat your sandwich toaster first. When hot, spoon in batter two tablespoons for each pancake. Toaster will fit two pancakes. Toast until golden brown.

Serve hot with fruits or maple syrup, or agave nectar or jam.
