Raw Vegan Cheesecake

You will need :

For the crust:

  • 1 cup groung almonds
  • 1 cup dates
  • A pinch of salt

For the filling:

  • 1 cup almonds, soaked overnight
  • 1 cup cashews, soaked overnight
  • 1/4 cup freshly squeezed lemon juice
  • 1 tsp vanilla extract
  • 1/2 to 3/4 cup agave nectar
  • 1/2 cup water
  • A pinch of salt

For the topping :

  • 1 cup frozen cherries
  • 2 frozen bananas
  • 1/2 cup dates
  • 2 tbsp freshly squeezed lemon juice

How to prepare:

Crust:
1. In a food processor, process ingredients for the crust until mixture sticks together. Press into the bottom and little bit up the sides of springform pan.

Filling :
1. In a food processor, process the soaked almonds and cashews until finely ground.
2. Add the rest of the ingredients and mixed until well combined.
3. Pour into the crust and smooth. Cover and freeze until firm.

Topping:
1. Put all ingredients for the topping in a high speed blender and blend until smooth.
2. Spread over the top of the frozen cake.
3. Cover and freeze again until firm.

Remove a pie at least 30 mins before serving.
