Vegan Chocolate Brownie

Egg and dairy free with natural sugar chocolate brownie will make a great, healthy treat! If you can’t eat nuts or want to give it to children you can leave the nuts out.

You will need:

  • 225 g dates
  • 60 g wholemeal flour
  • 2 tsp baking powder
  • 100 g vegan margarine
  • 3 tbsp cocoa powder
  • 1 very ripe banana, mashed
  • 80 g pecans or walnuts, chopped
  • 1 tsp vanilla essence
  • vegetable or coconut oil for greasing

How to prepare:

Preheat the oven to 180C/350F/Gas 4.

Place the dates in a saucepan with enough water to cover them. Cook over a medium heat for five minutes or until soft. Once the dates have cooked, drain off the hot water, and run them under cold water to cool. Puree them with a hand blender.

In a small bowl, sift together the wholemeal flour, baking powder and cocoa powder, then set aside.

In a medium bowl, using a fork, cream together the dates and the margarine until light and fluffy. Stir the sifted flour, baking powder and cocoa powder into the date and margarine mixture. Add the banana, nuts and vanilla essence.

Lightly oil a baking dish and spread the mixture evenly, smoothing the top with a spoon. Bake in the oven for 25-30 minutes, or until the brownies start to come away from the sides of the dish.

Allow to cool in the pan, cut and serve.
