- 500 g cooked beetroot, shredded
- 3 carrots, shredded
- 2 small, white potatoes, diced
- 1 onion, chopped
- 2 vegetable stock cubes
1. Boil 1 liter of water in a pan. Add vegetable stock cubes an let them melt.
2. Add onion, carrots and potatoes and cook them for about 10 minutes.
3. Next add beetroot and cook for another 10 minutes.
4. Let it cool and then blend soup until smooth.
5. Put it back to the pan and heat before serving.
