Easy and simple to make, coming from Polish cuisine – potato pancakes. I like simplify all my recipes and this one is not exception as well. You can serve them as a sweet dish by sprinkle some sugar on top or dip in apple puree (which I’ve never like to do that), or savoury if you add some salad dressing or vegan mayo.
INGREDIENTS :
500 g white potatoes
1 big white onion
1 tbsp flaxseeds (mixed with 3 tbsp water)
1 tsp garlic powder
4 tbsp flour (I used spelt flour)
Sea salt
Oil to fry
PREPARATION :
1. Peel and grate potatoes and onion. (what I like to do after is to drain the fluids. Simply put potatoes and onion to a nut milk mesh bag and drain the liquid – this is optional).
2. Place potatoes and onion in a bowl and add the rest ingredients, apart from the oil.
3. Fry potato pancakes on the hot frying pan with some oil. Add two tablespoon of the potato mixture to form one pancake. Fry on both sides till golden brown.
