I have another delicious raw cake recipe for you. It’s great for holiday season where everything is all about the chocolate 😉.
This recipe is so simple to make, just require a food processor and a blender. This cake is pure indulgence. The toppings is your choice; I used hemp seeds, some pieces of dark chocolate and sprinkled carob powder on the top. You can change your toppings according to the occasion.
For the Crust:
1 cup walnuts or pecans (or mixed them both)
1 1/2 cup Medjool dates, pitted
For Chocolate cake:
2 cups cashews (soaked)
1 cup Medjool dates, pitted
2 tablespoons raw cacao powder
1 cup water
1 tsp raw cacao protein powder (optional)
2 tablespoons maple syrup
1 teaspoon vanilla extract
1/4 cup coconut oil, melted
Juice from 1 lemon
1. To make the crust pulse your nuts in the food processor into powder. Then add dates and mix again until all starts to stick together.
2. Press firmly the crust into 7″ springform cake pan and put in the fridge.
3. To make a cake – blend all ingredients into blender until smooth. The cake should have a custard consistency.
4. Pour onto the crust and leave it to set in the freezer for at least 8 hours or overnight.
