This summer salad is very easy to make, very light and smells lovely thanks to fresh strawberries 🍓. Feel free to replace tofu with quinoa or couscous if you prefer. If you allergic to nuts, simply just omit them.
1 block of tofu
1 tbsp sesame oil
Small head of romaine lettuce
Half of red bell pepper
150g fresh strawberries
For the lemon dressing:
1 tsp Dijon mustard
1 tbsp apple cider vinegar
1 tbsp tahini
Juice of half/or one lemon
1 tbsp olive oil
Sea salt and black pepper to taste
- Heat the sesame oil in a pan, cut tofu in squares and cook until golden brown on both sides.
- In a bowl place chopped lettuce, sliced strawberries, sliced red peeper and chopped walnuts.
- Meanwhile prepare lemon dressing by mixing all ingredients in a small bowl. Add some water to desire consistency.
- Add tofu to a salad, drizzle dressing over and mix well.
