This recipe arise from a simple idea – what to do with leftover cabbage and carrots. Coleslaw came to my mind straight away and here it is. Just a few ingredients and you can make delicious addition to your dinner in no time.
To speed up the preparation proces I used ready made vegan mayo but you can make your own one if you like.

INGREDIENTS :
1 small white cabbage, grated (you can also add some red cabbage)
2 carrots, grated
Half of red onion, finely chopped
2-3 tbsp vegan mayonnaise
2 tbsp soya milk
Salt, black pepper and fresh dill
PREPARATION :
- Place grated vegetables in a big bowl, add red onion and mix well.
- Add mayo, milk, season with salt and pepper.
- Garnish with fresh dill. Is that simple. 😉
