This is quite a big bowl of salad here but feel free to share this delicious bowl with someone else or use it as a side dish.
This is for me a meal for sure, especially I like to have it as a light lunch. Now this recipe doesn’t nessacery abide by the rules of balanced meal, because it doesn’t have any grains in it. I guess it’s your choice, if you want to make it as a light meal or well balanced meal with grains addition (like quinoa, millet, couscous, brown rice, bulgur – anything you desire). I serve this bowl with delicious, equally light dressing.
INGREDIENTS :
For the salad:
3 heaped handful mixed leafy greens (I use lettuce, kale and arugula)
Half of avocado, chopped
Two big tomatoes, chopped
3 tbsp pomegranate seeds
1 tbsp sesame seeds
Half of apple, chopped
For the Dressing :
2 tbsp tahini
2 tbsp coconut aminos or tamari
2 tbsp nutritional yeast
2 tbsp water
1 tbsp able cider vinegar
1/4 tsp garlic powder
PREPARATION :
1. Wash all greens and chopped in smaller pieces. Dry well and place into a big bowl.
2. In a medium jar place all dressing ingredients and stir well until all combined. Add more water if you want more running consistency or more tahini if you want more creamier dressing.
3. Pour dressing over the salad and using your hands (clean hands😉) massage all leaf very well.
