Travelling over the holidays? I am huge fan of taking a good snack with me wherever I go✈🚗. I like to be prepare and take something healthy, nutritious and something that will satisfy my sweet tooth.
These are one of my favourite “to go” snacks – energy balls. I added some maple syrup to the recipe but you can definitely skip it, as without the maple syrup they are already sweet enough. To make them even more fancy I added reishi mushrooms, but is totally optional.

Makes about 24
100 g almond
200 g dates, pitted
1 tbsp coconut oil, melted
2 1/2 tbsp raw cacao powder
1 tbsp almond butter
1 1/2 tbsp maple syrup
Pinch of salt
1 tsp Reishi mushroom (optional)
- Place almonds into food processor and blitz first till broken down in a small pieces.
- Add the rest of the ingredients and blend until all stick together.
- Form the balls with your hands.
