INGREDIENTS :
2 cups cashews, soaked overnight or at least 4 hours
1 cup dates, pitted, soaked in a hot water for about 5 minutes
1/2 cup raw cacao powder
1/4 cup melted coconut oil
1/4 cup maple syrup
Pinch of sea salt
2 tbsp grated orange zest, plus extra for garnish
PREPARATION:
- Line small loaf tin with parchment paper.
- Drain cashews and dates and place them together with the rest of the ingredients in a high speed blender or food processor and blend well.
- Transfer the mixture to the loaf tin, spreading it out evenly.
- Cover and place in the freezer for at least 3 hours.
