ORANGE CHOCOLATE FUDGE

INGREDIENTS :

2 cups cashews, soaked overnight or at least 4 hours

1 cup dates, pitted, soaked in a hot water for about 5 minutes

1/2 cup raw cacao powder

1/4 cup melted coconut oil

1/4 cup maple syrup

Pinch of sea salt

2 tbsp grated orange zest, plus extra for garnish

PREPARATION:

  1. Line small loaf tin with parchment paper.
  2. Drain cashews and dates and place them together with the rest of the ingredients in a high speed blender or food processor and blend well.
  3. Transfer the mixture to the loaf tin, spreading it out evenly.
  4. Cover and place in the freezer for at least 3 hours.
